Wrong interrailing ticket - Advice needed

I bought an interrailing ticket over the weekend and was given the wrong priced ticket. I'm over 26 and should have been charged €400 for the ticket but the girl in the usit office got things wrong and only charged me €275 for the thing. The problem is that the ticket says that I'm under 26 years of age, despite my date of birth being printed on the ticket too which states that i'm 26.
I'm wondering what the procedure is when getting trains, do I present my usit interrailing ticket at the trainstation to get a ticket for the train or is it a case of just hopping on the train with my usit ticket and showing that to a conductor?
Just how closely do they examine the tickets when checking them? Do they always ask for a passport to validate it?
