Any old piece of junk should do really.... Buy a P3 second hand, theyre great bang for the buck these days. A p3 1.266 ghz should beat a 2.0ghz p4 a lot of the time.

As old in the tooth as it is these days I'd still go with a minimal Debian (with a 2.6 kernel) install for a standalone box like that.. Suse/Fedora/Redhat are just too clunky and preinstall a lot of services you will never need.
Then just download the latest sources yourself for whatever you need (iptables/ssh/cvs/squid) .. no need to worry about out-of-date apt sources then.
Don't have to worry about things like enlightenment/openoffice/mozilla taking your cvs/logging space then :)

    cvs, whats that?

I use Clarkconnect for a firewall/fileserver/internet gateway at home, all it needs is a p2 266mhz minimum i think with 256mb ram (i have 1ghz celeron 128mb ram which works fine).

source management software... a repository for source-code, where you can submit/checkout code, revert to previous versions etc... basically keeps track of changes.
