That's the difference between high-order models combined with proper lighting and what we have at the moment.

PCs are quickly approaching that kind of graphic (primarily lighting really) quality.

Boredom has nothing to do with it, since the method isn't particularly time consuming. HDR lighting has been around for a while, gamers would have little exposure to it since games have not been made to make use of it.
