Go to Barcelona, its gorgeous there. The buildings, the streets and lots of drinking fun to be had too.

A great thing to do is just book everything online - aer lingus fly direct to barcelona/madrid etc. or
ryan air flies to Girona a lovely town about 30 mins from Barcelona.
A brilliant hotel site is venere.com-we did this last year going to Barcelona and it worked out brilliant-The Jazz Hotel is a fantastic hotel in Barcelona-very central, brand new-we booked it on venere.com. Bon voyage!

Would highly recommend Seville - Aer Lingus now fly directly there and it would be a great city for a weekend break. Not too big, good sights, good nightlife and yummy tapas. Visited there last year in June and had a blast.

Madrid is fantastic for nightlife and art also - we found the people really friendly. For a capital city it's very cheap and reasonable value in accommodation isn't hard to find.

Would echo previous poster and say book everything independently - it'd probably work out cheaper, plus you get to pick where you stay. Mail back if you'd like any hotel recommendations.
