Well, theres Savins on O'Connell street. Go to the back and down the stairs. The selection there is limited enough but it's well worth a look. Staff are good.

There's also Steamboat Music, down on Steamboat Quay. Not the easiest place to find, start going down torwards the Clarion hotel from the city centre, and theres a row of houses across the road from a petrol station (i think), and a carpark behind that with a few businesses, and it's somewhere there. Be very wary of the guy who runs it, he can get you a lot of stuff at good deals but he's like comic book guy from the simpsons.
