anyone know of a piece of software that can extract text from a pdf (where the text is not selectable) or image ?

What you're looking for is OCR (Optical Character Recognition) software. More often than not, this comes bundled with scanners, but a google might find some free stuff for ye.

Search the web for 'pdf to text'
I came across a free one (command line, worked on Unix, IIRC) last year. Can't remember it.
