Is it possible to edit a Bootable CDRW or do you have to rewrite the whole disk ?

I'd like to replace the boot floppy image with another of the same size

or have a second session on the CD that could be modified without affecting the bootable part

or can you have a bootable CD with a rewritable section on it in UDF or similar format ??

No, you will have to re-write the whole disk. A CD can't have one part one file system and another part UDF.

And I don't think you can boot off a full UDF filesystem CD.
