If you could structure your own comp,
    What rules would you have?
What structure would you use to make it better than the others out there?
    What would you allow/disallow. :D

You can't get much better that the current K1 rules, MMA is ok but it can be boring if both fighters are ground fighters.

i'd go with what bambi said or the following.

    no strikes.
no joint locks except for the elbow.
strangles and chokes permitted except those that put a dangerous pressure on the spine.
no biting, scrathching, hair pulling, eye gouging, pinching, fish hooking and most importantly no name calling.
everyone has to wear a gi.
to win, force opponent to submit, assume control of your opponent and hold him down for 25 seconds. bounce your opponent off the mat a few times.

All punches, kicks, knees, elbows and headbutts allowed.

Gumshield, groinguard, and MMA gloves compulsory.

In the clinch fighters are seperated after ten seconds of inactivity (meaning a lack of meaningful activity, not throwing the odd strike and hoping not to be seperated).

No takedowns are allowed, but if one fighter falls (not intentionally) or is knocked to the ground, the fight continues.

A stading fighter can use all strikes, as can the fighter on the ground.

The fighter on the bottom cannot be "pinned" ie no mount, side control, scarf hold etc. The top fighter can however take a knee ride position to rain down strikes.

On the ground the same inactivity rules apply as the clinch, and the fight is stopped from here due to unconsciousness only.

I really like that Idea it removes the feeling that they got away by "falling" and keeps the momentum going but prevents the (IMO) boring ground fights.
