I mainly use the following few operators:

    http://www.skytours.ie/
    http://www.budgettravel.ie/
    http://www.travelfinders.ie/

I wouldnt go this week though - the place is plagued with a swarm of locusts =)

Basicly the package operators would probably be cheapest / most practical. You will probably get some good deals over the next 2-3 months, although I understand temperaturs can drop to 12 during the day in winter. :D

Lots of people ilke a bit of sun over Christmas - supply & demand

I always end up booking holidays in the canaries in january (bargain hunting) and usually you see that they are expensive the christmas week up to the middle of january then into feb they usually get cheaper
there is usually a fair bit of demand for just after christmas so if you see any decent deal now you should book it as this is exactly the time when every golfer in Ireland seem to head to the canaries
The only value deals i see at that time leave around the 8th -If you can hang on till then it will pay off Good luck
