Been using new shotgun last year and went to get my older browning maxus sporting out of safe after 12 months and plastic stock is very sticky, so much it leaves fingerprints and everything sticks to it. I see online it can happen.
Anyone else came across this and what did you do

Its that dura touch shite again. Same happened on some winchesters and browing rifles. Noting you can do to rectify except strip and then wrap/hydro dip. I'd personally get onto ardee sports the importer or trade it in.

would dipping last on a shotgun and would the problem come out through the material?

No You need to remove all of the sticky stuff first. Absolute pain.

some sako 85’s had this problem. Basically all you can do is strip all the finish off it, using rubbing alcohol, or paint thinners, and scrub. Then spray it, with a plasticoate or use hydrodip. Painstakingly slow, but if you put in the effort you’ll get the result. Plenty on google about it and how to do it
