Hyundai tucson petrol hybrid 1.6

seems like a nice enough car, but cheapest 2021 is about 28,000 Euro. Seems a bit pricey? Or are they in high demand etc

I know it all depends on driving but on average with mixed driving, what would the average litres per 100km be?

I have the executive plus Tucson 2021 1.6L HEV.

I have done 90,000 km and getting average of 5.6L/100km. Inbuilt navigation is great along with basic controls from the mobile app, remote start in winters,etc.

Absolute zero issues. Service is every 15,000 km.

Mrs has a Sportage HEV, essentially the same car, great on the short, stop / start type journeys but thirsty on the long distance motorway journeys so depends what you want it for. My biggest driving gripe with it is that lifting off the throttle doesn't take enough out for regen but that's entirely subjective but my other gripe is AndroidAuto integration which doesn't work wirelessly and is flaky at best with a cable.
