Plaster of Paris question.

I ran short of plaster of paris during a recent project and the bag of St.Gobain casting powder in the cupboard was gone off, however I did have some Gyproc joint filler also made by St.Gobain so I used that instead . . honestly apart from it drying a little bit coarser and the lower price, I couldn't tell the difference between using the Gyp filler and regular plaster of paris.

I tried looking it up online with no joy so wondering does anyone know what are the different properties of these quite similar products might be?
