Project Car Insurance

Hey All, I am thinking of buying a "project" car that I replace brakes, suspension, electrics etc as a hobby with the intention of getting it on the road.

I assume the insurance for something like this will be astronomical if you declare your doing modifications and/or like for like replacements by an unqualified mechanic.

Has anyone experience of doing this in terms of insurance?
Any advice or experience on this would be great.
