Hot Water Tank Temperature Sensor

I have a 20 year old thermal solar system that doesn’t work.

It’s hooked up with a theromax smt100 that has 3 temp sensors collector, tank and return.

Would it be possible to use these sensors (or new one) to hook up something like this?

The goal with be to know what the water temp is using Alexa (or phone) to be able to tell when we need to turn hot water on.

We have solar pv now but on days like today its difficult to know temp
