In search of Lentil lasagne recipe or a great veg lasagne

    I once ate a devine veg Lentil lasagne to die for in Lahinch

    I tried to get the recipe but the supplier didn't oblige and the place changed ownership :-(

    Was so so good ....

    Anyone got a good recipe ?

    I regularly make an excellent vegetarian lasagne, but it's not lentils; it's aubergines. A Jamie Oliver recipe.

    It is always made for the birthday dinner of a vegetarian son. However I just use one large aubergine, not 3; (And I just cube and fry them, not steaming)

    • and I often supplement with a handful of soaked red lentils or something similar, for texture and protein.

    It is highly popular with the consumers, by the way! Very flavoursome.
