Adding Spanish as a teaching subject

Does anyone know how you would add Spanish as a teaching subject through night courses? I know university of Galway do a 30 credit 2 year part time diploma. Are there any other options after this how to add the remaining 30 credits or do other universities offer any other courses?

I know Dalarna in Sweden does an online degree as well (and free for EU students), but the hours are not set to suit teachers. You'll have classes, and essential tutorials, during the day.
