I recently discovered that my car has certain mods that are different than factory .(coilovers and different wheels)

I genuinely didn't know when I bought it. The car is 15 years old.

A friend told me a few horror stories about insurance assessors flat out denying cover as a car had different alloys than factory model.

Shitting myself that my insurance will skyrocket (It's already very high as its a sports car) if I notify the insurer , but also **** myself if I happen to get into an accident.

You should notify them straight away. As it is you not be covered if you had an accident, and there might be no extra charge...

Personally if it was me I'd say nothing and just drive on. If you tell them you have coilovers fitted then they probably won't insure the car. If you are worried then just fit standard suspension, the aftermarket wheels shouldn't be a problem. Don't believe all the stories you hear

Might as well not bother with insurance at all.
