Quick question re: Fair Deal Scheme guys

If an elderly relatives savings are held in a joint account with one of their adult children can these 'assets' be liable for the 7.5% 'tax'?

    Thanks

Of course they can; the HSE wasn't born yesterday!

And bear in mind that, in the unlikely event that the elderly relative doesn't actually own all of the funds in the joint account, then they will need to prove it to the satisfaction of the HSE.
