What type of holiday, city break, beach? City break you could do Edinburgh, Lisbon you'll usually get good flights for those cities. For sunshine if you look at skyscanner you can view by month and pick the cheapest date (just set to direct flights only), if its only a few days you would be best going somewhere short like Majorca or Faro (can be chilly in portugal early may but you might get lucky). If you want a better chance of good weather I'd say Tenerife for 4 nights (too short for 3 as flight over 4 hours). Loveholidays could be a good way to search and see what they have as you can set the number of nights, I haven't used them but family had and were happy with it.

Go on to Skyscanner on put in everywhere as your destination and put in your dates. It will rank destinations according to price.
