College literature

Hey folks.

just wondering if any of you have any recommendations on good college literature regarding studying to be a chef, food science & anything like that.

Im not in or planning to go back to college I just want to read them for my own personal growth.

I actually don't know if he's written any books but if you have access to any academic sources he's written a tonne of journal articles. He also regularly contributes to RTE and the Irish Times so a quick Google and choose the News tab should get you something to start with.

Actually I think academia.eu might be free to sign up to and he has loads of stuff on there if memory serves me.
