I can't find it in Tesco, Dunnes or SuperValu?

I've had no luck finding it near me either.

Found the recipe below with good reviews so going to make that with the kids this weekend to keep them busy as the weather is going to be terrible again.

Great idea, just was reading the comments on that recipe and a few people mentioned that they doubled the ginger and it went down a storm, so that's what we will do too.

It's a cake you'd find easily enough in the North.

It's often sold cheaply in the the likes of Home Bargains, B&M and pound shops..

I picked up one a few days ago in So-Lo in Donegal.

Not quite as I remembered them. I have memories of them being bigger and not as soggy, for want of a better word.

I used to live that cake! Manufacturers are destroying the flavour of many products as they cut costs or aim for more profits. It's hard to know which it is.

So we baked the cake in the recipe I linked above before, today (doubling the ginger as suggested) and it was a big success. If you like Jamaica Ginger cake you'll definitely like this one. Next time I might even go with another half teaspoon of ginger as I love everything gingery, but it's gorgeous as is and is an easy recipe to do.
