Is is essential to use a 3/4 bender on 3/4 copper or is a metric bender OK?

Some local places seem to stock only the 15-22mm versions now. So I'm not entirely sure it's worth fussing over it.

I only used a bender once and wasted a few feet of copper in doing so (there's a knack to it).

I'd hazard a guess that as long as you're ok with a slightly fat-bellied flat-spot where the arched form touches the copper and it's not going to be critiqued by a pro, you'll be fine as there's little in it between the two sizes.

But maybe a pro will say otherwise. :)
