Is this normal or should a fridge- new or old- always be humming? Guy in Harvey Norman said it’s ok. It’s not heating up or anything like that and I have it on for only a couple of hours so… any feedback would be most welcome

when you say you have it on only a couple fo hours you don’t mention whether it’s larder fridge, fridge freezer or American spec you have or whether it is full up or not .Any fridge will run until it reaches the desired temp, fridge section c+3 degrees or freezer section -16 to 18 degrees. If it runs continuous I would suspect it has a refrigerant leak and it can’t get temp down to cut out

Look in your user manual to see if there's a "shop mode" or "demo mode".

When fridge freezers are on a shop floor, many of them are set to this mode which disables the freezing/ cooling function. The thing looks like it's working eq all the lights work etc.

Or maybe your one is just really quiet.
