ok I'm not Mr Paranoia but are there any privacy issues when connecting Phone to a rental car?

Not sure if car will have android auto if so take it everything encrypted. Be using it for Google maps and music and possible calls

Before giving car back do you need to clear anything

    Cheers

Most cars ask if you want to share all your contacts so that you can make calls etc from the car, just say no to that

You can delete your device afterwards but no one can connect to it without your phone in the car

Doesn't matter OP. Once you leave the car back there's nothing they can do without your phone there.

I've rented cars and on the screen there's been loads of past saved phones. I normally delete them myself to make room for mine.

I'd be doing a factory reset on the head unit in the car if it has its own inbuilt sat nav and removing your phone from the list of snyced devices and clear all recent calls.

Recent Spanish legislation on what data is required to be provided by car rental companies is rather draconian...

Car rental customers, meanwhile, will also need to provide payment details, as well as driving licence information, time, location of vehicle pick-up and return, rental mileage, and post-rental GPS data (where available) detailing the customer’s movements.
