Updating my home build

I'm considering upgrading my PC which I built in 2019.

It's used for gaming. Primarily sim racing (iRacing, Automobilista 1 & 2), but also an occasional "AAA" title like Jedi Survivor. I'm not obsessed with running ultra detail in 4k, as long as it looks good and runs smoothly at 60+fps, I'm happy. I am thinking of getting a wider monitor, to facilitate a larger FOV when racing. Something like: https://www.amazon.com/ASUS-VG328H1B-Supports-Adaptive-sync-FreeSync/dp/B087V5RLFB/ref=sr_1_13?crid=1WZ3LW2FH6HS0&keywords=computer+monitor+32+inch&qid=1690568136&sprefix=computer+monitor+32+inc%2Caps%2C187&sr=8-13

    The current specs are:

    Motherboard: MSI B450 Gaming Plus

    CPU: AMD Ryzen 5 2600 3.4 GHz

    PSU: Corsair TX650M 650W

Boot Drive: Samsung Evo 250GB SSD

    Additional Storage:

    Seagate BarraCuda 2TB SATA HD

Western Digital 2TB SSD (added later)

    RAM: Cosair Vengeance 16GB (2x8GB) 3000 MHz DDR4

GPU: nVidia GeForce RTX 2060 6GB (added at a later date)

I was thinking of upgrading to an AMD Ryzen 5700X or 5800X and a suitable GPU upgrade - I need advice on the latter. I'd imagine a RAM upgrade wouldn't go amiss either.

Budget is about €1,000 - €1,200, including monitor. But I have flexibility on it.
