Just bought a reconditioned Samsung Xcover4 phone from Refurb and it has a French setup.

Is it difficult to set it up in English?(I have v good French but this is not really ideal)

    Go into settings.

    Find Device Management > Language

Or from the top pull-down menu, select the cog icon and search for Langue.

A follow up.Typing is still difficult as all the suggestions/autocompletes are still French.

Can I change this too ?

    Cool.

On the keyboard bit I prefer using the SwiftKey Keyboard. Now Microsoft SwiftKey.

It offers customisation in terms of colours, number row etc.
