Can someone please tell me if economics and finance is actually that much better than commerce international in terms of salary, jobs, career prospects and future opportunities in different sectors, do employers care that you've graduated with let's say a french minor with commerce international?

Economics and Finance is probably amongst the toughest and most quantitative finance-related UG courses in the country. Take a look at the list of modules. You would need very good quantitative skills.

Commerce International is more of a general business degree with a bit of an international component. A lot easier to do well in I would say.

Honestly you'd be much better off doing a STEM subject - Computer Science graduates earn the most. Economists are not massively in demand and most ECON jobs require a PHD now. Don't do it!
