Just serviced car during the week and asked garage to sort out engine lights which were showing up.They were off for a day and back again. Why would this happen?

They didn't fix the problem that is causing the light to come on

Can they just turn them off without fixing the problem?

No, a fault light comes for a reason - to tell you there is a fault that needs to be fixed. All the garage did was clear the old fault codes but as the underlying problem is still there, the light just come back on again when the car's computer detects the problem again. The faults need to be fixed permanently and then the fault light won't come on again.
