Told today that eir can give us 500mb broadband as 'infrastructure in your area being fully subscribed' waiting for a call back from them but does this mean ports and is there anything that can be done or way to expedite ir? Wouldn't be able to work off up to 6mb broadband so would probably have to try 3 5g.

The most probable answer is your address is served by an ODP thats full. They'll never add another ODP for 1-2 homes.

Best route out might be placing a decent 5G antenna on the side of the house and using 3s AYCE deal. That or SIRO if available to you.
