Heat pump and air con in one?

    Is it possible to get a unit that will manage under floor heating, heat water and send cold air around on extremely hot days instead of heating the under floor?

    Yes, look at the Nilan Compact P with the Air 9 heat pump. The underfloor heating and hot water is easy. The cooling is more of a challenge. Pumping cold water around the underfloor pipes on a hot day is possible with a “reversible” heat pump like the Nilan Air 9, but it can lead to condensation forming in the floor so it’s typically turned off by default. I think it’s possible to get moisture sensors installed in your floor if you’re planning to be circulating cold water. The Compact P can also provide cooling through the ventilation system by cooling the supply air being pumped around the house. This works reasonably well, depending on your house design it can help it feel cooler in hot weather, but not as effective as air conditioning.
