Eircode is location based, not name based.

Changing the name shouldn't affect the eircode.

Take down old sign. Put up new sign. Tell postman. It may take a few months to filter through.

EirCode should stay the same. Address associated with EirCode will change on their database.

Postman probably delivers your mail according to your name rather than the name of the house. Thats how An Post worked for years in rural areas and one of the reasons for Eircodes so not just the postman can find your address.

Wake me up when it's all over.
