I plan to install a chevron engineered wooden floor.

Has anyone done it? Can you share tips? Do you know anyone who has installed them in Cork city and can either carry out the job or give advice?

I wouldn't use engineered wood in a parquet situation.

Its not durable enough, you would be far better off getting some AC4 Laminate and using that. Its almost indistinguishable from real wood and probably 10x more durable. Engineered wood is very unforgiving of any kind of damage.
