Long story short - Windows laptop died. Luckily due to space concerns I transferred photos etc to an external hard drive. Now, I don’t want to replace the laptop or get it fixed but want a MacBook Pro. Will the external windows hard drive be read ok by the MacBook Pro and could I transfer the photos from it to the MacBook’s internal drive?

Depends, what file system is the laptop drive formatted in?

If its NTFS it can be read on OSX, but if you want read/write access then you'd need something like Microsoft NTFS for Mac by Paragon Software - https://www.paragon-software.com/
