Romantic Hotel/Location for Weekend not far from Faro Algarve

We are a couple in our 40s looking for recommendations for a nice hotel/location for a weekend away from the kids in May. We are flying into Faro and are willing to rent a car so an hours drive from the airport would be about as far as we would travel. Any suggestions?
