Repair Water Damaged Wall

Our chimney was leaking and we had it repaired two months ago and have since then had a dehumidifier in the room. I also sprayed the wall with spirit vinegar to kill any mold. I’m going to run a paint stripper over damaged areas to remove loose plaster and flaking paint. What can I fill any resulting holes with and what grade sand paper should I use to sand this filler? Once the walk is fixed, I’ll paint the room. Ive included a picture of the wall.
