Got some good recommendations here before.

Looking for an intimate, elegant, luxurious restaurant may be slightly old fashioned, with not too much foam and twiddly bits the kind with a head waiter not overly trendy in other words, excellent service

L'Ecrivain would tick all those boxes.

Its long gone. The Clarkes are to open somewhere else but its not open yet.

Unicorn would also probably be suitable (and is one of the oldest restaurants around - 1938) but its probably not reopening either.... Guilbauds out of budget I'd imagine?

Pearl Brasserie is fabulous as is Dax - you cant go wrong with either of them

Just an update we went to the Tannery in Waterford instead and had a short break away. Its very good similar to Dax or Pearl Brasserie 65 for the dinner menu, nice wine list, excellent services.

Good restaurants in town are getting very pricy 75/80 euro for a 3-course dinner plus a bottle of wine puts the dinner and wine at 200 euro for two which is expensive in my opinion.
