I'd rather spend the few extra euro to replace the sink than those huge taps - not sure how those prevent you from still burning your hands if that is your phobia

I get your point Fritz, but there are 5 basins to resolve so it adds up at the moment. My starting point was your suggestion, I might see if i can find lower quotes, but what is there is fine, just not a fan of the tap format.

would it be feasible to put a mixer tap on one side and blank the other side?

the other thing you could do is reduce the temperature of the hot water in your hot cylinder.

Ok I don't have a real phobia of burnt hands. Two separate taps is old school and not exactly efficient or expedient. Changing the sink may be nicest way of getting a merged flow of water. I was just hoping there may be another eloquent solution which didnt generate the extra work and cost which goes with tearing sinks out.

If you are worried just about 'scalding' you could put a 'thermostatic mixer' on the common feed from the hot water cylinder. This will limit the max hot water temperature, and is adjustable. These are mandatory on cylinders that are connected to solar panels where the water can get very hot (and is in fact a major safety concern).
