Amazon firestick posted by my son to me. When it arrived I discovered the item replaced by a top of plastic container. Not insured. Any recourse?

Was it posted within Ireland? Was there any tracking number? Was that the only item in the package?

It was posted in Ireland on Tuesday and delivered today. He has the receipt of postage.it was the only item.

No recourse, but definitely make a complaint to the local delivery unit.
The managers there take such incidents very seriously and will know what route the package most likely took.

They'll log it and will watch for patterns

Something similar happened to me. I posted an item to Wexford from Dublin using the An Post cardboard boxes that you can buy in the post office. I did not pay for tracking. The receiver got a flattened empty An Post box in an An Post plastic bag. As the sender I contacted An Post. About 8 weeks went by and I got a letter saying they had investigated the matter but could not find the contents of the box. The gave me €6 worth of stamps as compensation.

No recourse but do report it to An Post

Similar issue here, only mine was AddressPal end of things. Hundreds of euros of product very specifically stolen from a package after AddressPal weighed it into their system. I have a thread in this forum on it. It's my first experience of postal theft and is a real violation.
