Fermentation cultures for dry curing

    I've been unable to get my hands on fermentation cultures for dry curing sausage/salumi. I've previously been advised to try Herterich's in Longford, but had no luck..

    Anyone got a local recommendation in Irl? Since Brexit, the UK is not a viable source IMO
