Can it be driven with the tax out of date until the new log book arrives or do you have to park it up until it’s taxed? Assuming the tax is 5 months out of date.

By the letter of the law, you cannot drive without tax.
That said, there isnt a guard in the country that would fine ya in the days after buying a car.

Might be wise to bring some proof you've just bought it.

Don't do it, as Mickdw says the law is "you must display a current valid tax disc".
I drove a car home(suddenly becomes our car) with a smashed/vandalised windscreen the tax disc was still there on the dash but that was not good enough for a jobsworth guard.
I produced tax etc the following morning but still ended up in court as not logged properly.
Judge was fine and lashed the guard out of it.
My job was a bit sour about the morning off.
Similar happened to my son and others

My windscreen( soon becomes our car when something's wrong) was smashed but the tax disc was on the dash for anyone to see.
Still ended up in court after producing same within 10 days.
Judge was great, guard admonished, job not happy with my morning off.
By the way took just under 2 weeks to transfer ownership and pay the tax on line this morning on my yoke.
So I am not thinking you should chance it law is" you must display a valid current tax disc".
    double post losing it.

As I said my son and others.
A quick search of previous threads on here tells me it happens.
