Screen Mirrior casting to Old Screen

    I apologise if this has been covered before but I'm trying to cobble together old and new tech. These are for a car entertainment system and I want to keep it factory original.

    There are two separate systems, one for the rear and one for the front with TV tuners and DVD etc. They also have RCA inputs so was thinking I'd try and cast the phone screen to them. I know the screen formats and resolution will be far from ideal and the graphics will be a throw back to pac man but for a youtube vid or spotify it would do and be a bit of fun.

    There are lots of HDMI to RCA connectors for example:

    I'm struggling a bit though with the HDMI receiver though. There are so many out there its confusing and as I'm casting the phone screen I don't need one with apps etc

    I was thinking about the Chrome cast and the lastest one seems to have a guest mode that doesn't need Wifi but not 100% sure on that.

    So is there any other one that someone could recommend. I won't have a wifi network per se and would rather not be trying to set one up using phone hotpots etc. Something that the phones could connect to and directly cast to would be ideal.

    Phones:
    Xiaomi Mi9 & Mi9 Pro
    Xiaomi Mi A1 - probably the preferred device as its a spare phone so could be dedicated with a gomo sim or whatever other deal is there.
    Apple iPhone 11 - kids

    So keeping cheap and cheerful is good given I'm about as far from 4k as you can get. The car sound system is excellent but I can't see that translating over this set up so no point in worrying about it. Compact is also good as keeping everything well hidden is a plus.
