Buying a new car today, put deposit down and picking up today.

Can anyone tell me if its ok for me to drive it home? Its second hand from dealer, ill be completing registration certificate today so id imagine change of ownership will take some
    time.

Only then can I tax it. Am I ok to drive it home though? About 30km away.

Insurance is changed over but what happens if I get stopped by guards?

You'll have a receipt to show that you've just bought it. You'd also need to be extremely unlucky to be stopped on the way back from buying. As long as the car insurance is in order, then you will be ok in 99.999999% of cases* (There is always a tiny chance of meeting an OTT Garda)

How would you usually get around this problem though?

Leave it with dealer whilst change of ownership is happening? and then tax once thats confirmed?

You drive the car home. If stopped by the gardai, produce the receipt to show that you purchased the car on that day. If they're being particularly pedantic, you'll be asked to produce tax and insurance at local station within 10 days (not 100% on time allowed) and be sent on your way.
The chances of being stopped are miniscule so I wouldn't be getting stressed about it.

Depends how long it's out of tax tbh, if it's more than 2 or 3 months or whatever it is, the guard can seize the car.
