The Generator Hostel on the square there has a large bar area that's good for a few scoops and food. For sports on TV, The Woolshed on Parnell Street is a good option that's nearby.

Not sure how many, if any of these are open, but The Cobblestone (trad) & Frank Ryan’s (eclectic) both in Smithfield are great but don’t show sport. The Belfry & Walsh’s in Stoneybatter are a better bet for showing sport.

    Cobblestone isn't open yet.

    As for the OPs queries:

The pubs closest to the Hendrick that are open - Ryans, Token - don't have TVs.

The vast majority of pubs are operating to either 90mins, the 105mins or 2 hours as their stretching it a bit idea of the current regs and I'd expect that places that aren't enforcing it don't want it shouted around the place! You will probably be left alone for the length of a match most places even if you're in a bit early.
