Hi,

If I delete my account, what information is retained by boards.ie and for how long is it retained? i.e posts/IPs/email addresses etc

There's the official statement in the Terms of Use, section 7.

https://www.boards.ie/content/terms?site=desktop

but basically, posts remain, all other profile info is deleted, the email address is replaced with a hash to prevent re-use of it.
