Heating/Water in 1950s cottage

We're currently renovating a cottage that was built in the 1950s, and would love some advice on what the best heating and water system would be. The more I look, the more confused I get....

Current heating system is a couple of open fireplaces, and that's it! There was a range in the kitchen that did the hot water, but it rusted through while the house was unoccupied. Insulation is pretty much absent, so that needs putting in as well (advice on what best to do there also appreciated!). We're rural, so no gas pipeline, but we are on the mains water.

As far as I can tell, the options are oil (which seems to be cheap at the moment, but I wonder about the long term, and also don't love that it's non-renewable), electric (which is more expensive but could be supplemented with solar panels, etc perhaps), pellet stove (which I know nothing about). Heat pumps sound great, but I don't know if we're well insulted enough, and from what I've read would involve upgraded the electricity connection?

Any advice on what best to do would be gratefully appreciated. We really need to sort something out before the winter, dreading the thought of the colder months at the mo!
