What's the normal practice for closing the ends of the ridge?

The slates overhang the barge by 40mm so the standard ends won't work.

What sort of ridge tiles? Is there slate edge trim going up along the gable?

    Unusual :)

In fact I don't think you will ever get it sealed along the slates

You can get a end cap for them ridges, but you have a few other details to sort out before you go worrying about end caps
