First time to Dubai. Trying to decide whether to go Half Board or just B&B? What is it like to eat out in the evening? Is there the usual line of restaurants, etc. in the touristy spots?

Not really, not like you'd expect to see in Spain, Portugal, Greece etc.

It was 5 years since I was there, but going out for dinner each night would have been one of the highlights.

If depends where you are staying. We stayed right beside the Burj Khalifa(Downtown Dubai), so I can't really speak for the Dubai Marina.

Sheikh Zayed Rd would have restaurants and shops down each side. Mostly American chain restaurants or fast food, but it's a huge road so I'm sure there's other restaurants.

Around the Burj Khalifa there are some nice family run restaurants. There was an Iranian one which was really nice and fairly cheap(€12-14 mains). Beside that you have The Dubai Mall. It's enormous. Plenty of restaurants. A lot of chain restaurants like Cheesecake Factory etc. The hotels all have nice restaurants. Again, some might be chains like Trader Vics.

Old Dubai is great. Lots of activity, a lot of immigrants live and eat around there. It's really cheap. Don't remember there being many "fancy" restaurants but loads of cheap( €5 euro-ish) authentic food. It's worth going down to the Dubai Museum & Al Fahidi Fort and get a boat along the river too.

There is also Mall of the Emirates and Souk Madinat Jumeirah in the Marina(which is really nice and has a few nice restaurants).

Also make sure to book a Friday Brunch in one of the hotels if there is one on while you're there. We done one in The Conrad. It was fantastic but a little quiet. Try some of the bigger hotels first.

Taxis are cheap and safe so it's easy to get anywhere in the city.
