X570 is top of the line not middle of the road, probably overkill

Mind you B450 won't be able to run the memory at it's top speed, will be throttled to IIRC 3000MHz.

Incorrect, Ryzen's memory controller is on the CPU.
My 3600X runs with DDR4-3600 no issue.

Parts look good, though IMHO you could just get an MSI B450 Gaming Pro Carbon AC and use the extra on cooling - if you find yourself needing more SATA in future, there's always PCIe cards.

Thought the stock cooler was decent now, what would you recommend to replace it with?

Ah it's fine like, but if you want to maintain maximum boost with PBO, the cooler the better.
The AMD Wraith Max is £13 on OCUK - it's a decent little cooler, super cheap for RGB.
I'd recommend reading the LTT tier list - basically anything in Tier 5/6 will be great.

Good old Noctua Nh-d14 or 15. Silent, cool and big.
