Any advice of the difference between steam cleaning the exterior of a vehicle vs "regular" cleaning starting with a snow foam wash?

Snow foam is mainly a pre clean solution it will soften and lift the dirt enough that majority (if not all) will safely be removed when rinsed.

Not sure why somebody steam clean a car as an everyday exterior clean and not sure it be great for exterior paint, only time seen someone doing it was at limerick show and guys were dragging dirt across paint with a micro fibre. Its possible any wax/sealant maybe damaged by heat. It be similar to snow foam as in super heat will loosen dirt, opposed too chemical.

Personally I've only used steam under the car to help remove some crap from nooks n crannies.
