We just got bathrooom renvated and told the bathroom guys this was an issue ( the shower was constantly getting blocked and when emptied the sink, it would run out the shower plughole.
We were disgusted to find that still an issue when the sink is emptied ( and no doubt in time the shower will get blocked also as more gunk gets trapped) . They said there was nothing they could do to sort it ? Surely it should have been possible to make the shower pipe higher than the sink so that the flow of water would go towards the waste pipe ? The pipes are above the floor

You can fit a non return waste valve to the shower waste which should stop the water from your sink coming up the shower. Ask him to come back and fit one, its a small job.

Sounds like its all under the floor which makes that a breaking tiles up job.
All appliances should be ran out separate, hard to say if anything can be done without seeing the job.

True, although they say the pipes are above the floor.

    Apartment or House??

It's a house.Pipes have been boxed off and tiled over Once can keep the pipe between shower and sink clear, then will live with it , but don't want shower to end up blocked a few times a year and not being able to spend more than a minute in it because water doesn't drain fast enough.

    If its all boxed in then you only have three choices;
    1. Break off the tiles and re-pipe the basin and shower waste.
    2. Open the ceiling below and get at the pipes that way.
    3. Live with the situation as is.

If choose living with it, what's best way of keeping the pipes clear of hair, gunge? Those plug unblocked bottles once a month? Pour boiling water into shower drain every week? If none of these will really work, then will say to bathroom guys and ask them to fix. We specifically asked them to fix this . At same time want to avoid any more removing of tiles etc if there are workarounds for the next 10 years

In that case pursue it, I know its not nice to break out tiles, but its really not the end of the world if replacements are available.
I know someone in an apartment who had a very top end bathroom job done, bath out, shower in etc.
For convenience his plumber re-routed the waste from the shower to the "stack" beside the stack it was originally connected to.
Unfortunately, he connected into the kitchen vent for an apartment two levels down with very messy results.
Shower doors back down, wall tiles off, shower tray out etc, a right mess.
If they get stuck into it they should be done in a day or two to rectify it for you.

Oh don't know if can face another 2 days of bathroom being ripped up. Currently in midst of replacing all floor tiles. This is time to say to them though before floor tiles go back down. I know they'll claim it was done correctly and no need to redo

He said they have fixed it and he is going to use some hoover thing to clean the drain and it's only a temporary thing.

What's only a temporary thing, the repair?
    You want it permanently resolved.
